LES BAUX DE PROVENCE A.O.C. OLIVE OIL AND OLIVES

The Baux Valley is olive-growing land par excellence and it has one of the most striking landscapes of olive groves in Provence. It is a unique area because, under the same geographical name, three different products are entitled to the A.O.C. label - olive oil, cracked olives and black olives.

The dark, fruity oil, which has notes of mushroom, woodland undergrowth and cocoa, or the green fruity oil with its taste of grasses, raw artichoke and blackcurrant, are comparable to a great wine, with a bouquet, a colour, a flavour and elegance. There is not only one Baux Valley olive oil; there are several olive oils, various crus of olive oil just as there are various crus in winemaking. The unusual feature of this A.O.C. olive oil is that it is made from a blend of several varieties of olive i.e. Salonenque (also sold as cracked olives), Beruguette, Verdale and Grossane. It is the subtle blend of these varieties, a secret jealously guarded by each producer that gives the oils a whole palette of different flavours.
